1 1/2 lb ground meat
taco seasoning to taste
1 onion diced
1 half green bell pepper diced
1 can corn
1 can ranch style beans
1 can rotel
1 can cream of mushroom *
1 can sliced black olives
three and a half cups of cheese
corn Tortillas
Preheat oven to 350
Brown ground meat, pepper and onions add taco seasoning to taste.: Divide in half and put half in bottom of a 9 x 13 x 2 pan. Evenly sprinkle can of undrained beans on top of meat. Top that with about a cup of cheese, Layer tortillas on top of cheese and try not to leave gaps. Put other half of meat on top of tortillas, then drained corn and then cheese. Layer again with tortillas and again try not to leave gaps. Mix together cream of mushroom soup and rotel by blender or by hand, pour mixture over last layer of tortillas. Sprinkle remaining cheese evenly over top of casserole and then bake at 350 for 40 minutes. When you take out of oven sprinkle drained olives over the top.
Garnish with sliced avocado, hot sauce and sour cream.
*One of my friends that HATES mushrooms uses a can of Cream of Chicken soup or a can of Cream of Celery and it works well for her. When I was a kid I hated mushrooms and I never knew that was what the topping was until I started making it myself. Mom's can be tricky when they want to be.
