Meta’s Divine Salmon Patties

Meta’s Salmon Patties

2 cans of salmon, drained with skin and bones removed*
3 eggs
½ cup flour
1 tablespoon salt
1 teaspoon pepper
1 teaspoon garlic powder
½ finely diced onion
5 shakes of Louisiana hot pepper, more if you want them hotter ( kinda learn as you go thing 5 is bitey enough for my family)
A cup of Panko Bread Crumbs dumped in a flat plate

Put salmon in a bowl and mix well with all other ingredients with it. Form a ball with several tablespoons (make them as big as you want them), Then press them into a ball. They are going to be sorta delicate. Press them into the panko on one side then flip them and put them on the other side and then get panko on that side too. When covered in Panko (no need to put a lot). Fry them until they are medium brown on both sides. Drain well then serve.

For the traditional recipe, omit the garlic powder, Louisiana hot sauce and Panko. If you make the traditional recipe you may need more flour to get them to brown up nicer. The panko makes it crispy. 




Garnish with Lemon wedges... My kids are eating these like crazy.. They almost do not want the side's!
